Marinated Cucumbers, Onions, and Tomatoes

 

 

1.Prep and De-Sharp Vegetables:5 min.

Wash all fresh produce. Slice the 2 medium cucumbers into $\frac{1}{4}$-inch rounds, halve the 1 cup of cherry tomatoes, and slice the ½ cup of red onion into thin half-moons. If the raw onions smell overly sharp, submerge them in ice water for 5 minutes, then drain and pat dry.

2.Compound the Osmotic Dressing:2 min.

In a small bowl or measuring cup, combine the ¼ cup of apple cider vinegar, 2 tablespoons of granulated sugar, and ½ teaspoon of fine salt. Whisk vigorously by hand for 60 seconds until the sugar and salt crystals are completely dissolved.

3.Combine and Coat:3 min.

Layer the prepared cucumbers, halved tomatoes, and drained onions in a wide glass or ceramic bowl. Pour the dressing over the top. Stir gently from the bottom up using a silicone spatula until every piece is glazed. Fold in fresh chopped dill or black pepper if using.

4.Cold Setting Rest and Service:5-60 min.

Let the salad sit at room temperature for 5 minutes for immediate serving, or cover and chill in the refrigerator for 1 hour for optimal flavor integration. Serve cold using a slotted spoon.

 

Variations & Storage Boundaries

  • Mediterranean Style: Top the chilled salad with crumbled feta cheese and pitted Kalamata olives immediately before serving.

  • Advance Meal Prep: Store the chopped dry vegetables and liquid dressing in separate containers in the fridge up to 24 hours ahead. Pour the dressing over the veggies 1 hour before serving to maintain maximum crunch.

  • Refrigeration Limit: Best enjoyed within 4 to 6 hours of assembly. Can be stored in a sealed glass container in the refrigerator for up to 2 days (note that prolonged acid exposure will soften the cucumbers over time). Do not freeze.
