No-Bake German Chocolate Pie

 

 

1.Mold and Chill the Crust:5 min.

In a medium bowl, combine the 1½ cups of crushed chocolate cookie crumbs and 6 tablespoons of melted butter until the mixture resembles wet sand. Press firmly and evenly into the bottom and sides of a 9-inch pie dish. Chill in the refrigerator while making the filling.

2.Whip the Chocolate Filling:10 min.

Melt the 1½ cups of chocolate chips in 30-second microwave bursts, stirring between each until smooth; let cool slightly. In a large bowl, beat the 8 oz of softened cream cheese and ¼ cup of powdered sugar until smooth. Blend in the melted chocolate, then gently fold in the 8 oz of thawed whipped topping until light and uniform. Spoon into the chilled crust and return to the fridge.

3.Cook the Coconut-Pecan Custard:8-10 min.

In a saucepan over medium heat, whisk together the ½ cup of evaporated milk, ½ cup of brown sugar, ¼ cup of butter, and 2 beaten egg yolks. Cook for 8 to 10 minutes, stirring constantly, until the mixture thickens into a rich custard. Remove from heat and stir in the 1 cup of coconut, ½ cup of chopped pecans, and 1 teaspoon of vanilla extract.

4.Assemble and Deep Chill:2 hr+.

Let the coconut-pecan topping cool completely to room temperature. Once cold, gently spread it in an even layer over the set chocolate filling. Refrigerate the pie for at least 2 hours (or overnight) until firm enough to slice cleanly.

 

Storage & Serving Tips

  • Clean Slicing: To get neat, bakery-style slices, dip a sharp knife into hot water, wipe it dry with a towel, and slice through the pie. Repeat between each cut.

  • Refrigeration: Store leftovers covered tightly in the refrigerator for up to 4 to 5 days.

  • Freezer Directions: This pie freezes exceptionally well. Wrap the assembled, fully chilled pie tightly in plastic wrap and aluminum foil, then freeze for up to 1 month. Thaw in the refrigerator for 2 to 3 hours before serving.
